GRAPES: 70% Barbera – 30% Nebbiolo
HARVEST PERIOD: late September through handpicked harvest
VINIFICATION: traditional, with submerged cap with scheduled replacements (from 15 to 20 days)
MALOLACTIC FERMENTATION: spontaneous, in a steel tank
AGING: at least 12 months of Barrique aging, done separately for the 2 grape varieties, which are blended afterwards
AGING POTENTIAL: 5 years

SENSORY NOTES
COLOUR: ruby red
SMELL: fruity, in particular of evoluted red fruits
TASTE: round and full bodied, with a good acidity balanced with tannins
FOOD PAIRING: risotto with cheeses or a traditional Bollito
WHEN TO TASTE: to warm up a cold winter night
FORMATS: 0.75 L
